Summer may be over but every season is salad season if you want it to be. Try this easy salad at home in 15 minutes to improve any meal by combining kale and pomegranates. Let’s keep those summer bods going for as long as we can with quick recipes – because who doesn’t love a fun, fruity salad!
Ingredients:
2 bunches of curly kale
1/2 cup pomegranate seeds
1 apple
1/2 cup of pecans
1/3 cup apple cider vinegar
1/3 cup olive oil
1 1/2 teaspoons Dijon mustard
1/2 teaspoon chili powder
3 pinches of salt
Steps:
In a bowl, combine apple cider vinegar, olive oil, dijon mustard, chili powder and salt
Wash kale, tear into bite size pieces then massage the kale for 2-3 minutes with olive oil on hands
Break pecans into bite size pieces and heat on stove for 3-4 minutes
Remove the seeds from the pomegranate
Cut apple into thin slices (julienne style)
Combine all ingredients in large bowl, dress and serve!
