Dr. Jodi’s Clean Eating Notes: Sweet potatoes should be a weekly or even 3/weekly staple in your home! They have so many health benefits, when you eat them, you truly are feeding medicine into your body. They are especially helpful for hormone balancing. They are part of a group of foods called phytoestrogens, which help to detoxify harmful estrogen that come into the body from environmental toxins (cosmetics, plastics, and processed foods).
INGREDIENTS
1 medium size sweet potato
Toast Ideas
Mexican Toast
mashed avocado, chili flakes, sea salt, lime
California Toast
mashed avocado, cucumber, smoked salmon
Chunky Monkey
almond butter, sliced banana, cacao nibs, cinnamon
Power Breakfast
poached, fried or hard boiled egg, mashed avocado, hemp hearts, sea salt, cracked pepper
Niçoise Salad
mashed white bean, tuna, spinach
Israeli Breakfast
hummous, cucumber and tomato
Sweet Toast
almond butter, hemp hearts, chia seeds, raw honey
DIRECTIONS
- Wash the sweet potato well and slice the ends off. Slice the sweet potato in ¼-inch slices. It is easiest to do this if you stand the sweet potato on the cut flat end.
- With a fork, poke the flesh of each slice once or twice.
- Place slices (as many as you need) into the toaster (a regular standing toaster or toaster oven).
- Set the toaster to the longest setting and toast the slices. Flip the slices and repeat at least one more time, you may need a third time. The slice of potato will look toasted and puff up a little.
- Top with desired toppings. Makes about 6 slices.
Chef tip: I toast all the slices and refrigerate what I don’t need. When I need another slice, I simply place it in the toaster for a quick crisp and warm up. The cooked slices will last 4 days in the fridge. They also freeze well toasted or raw
